MASALA SEV (DRY SNACK)

As we are all confined to our homes we are finding different activities to keep sane . I am more into cooking after my office hours.There are days we make minimal and simple and delicious dishes. This week I thought of treating my boys with Masala Sev , a savoury fried snack that is absolutely irresistible. Fried snack once in a while is ok.

Story of my Chakli Mould….

As i decided to make Khara Sev , i started looking for the Chakli mould. My mould was so tight and I was unable to remove the star mould which was stuck. Just when I was thinking of dropping the idea of making khara sev my multi talented hubby came to my rescue. He got the star closed using a clean washer and a screw and drilled many holes in the plate. Viola my sev mould was ready in minutes. He is very quiet by nature and a keen observer.My pillar of strength always.I am blessed to have him as my partner.

Recipe for Masala Sev:

Ingredients:

  • 1 Cup Besan / Chickpea Flour
  • 1/2 Cup Rice Flour
  • 1 Tbsp Roasted Urad dal Flour
  • 2 Tbsp sizzling hot oil
  • 1 Tsp Ajwain
  • 1/2 Tsp jeera
  • 1/4 Tsp Haldi / Turmeric
  • 1/2 Tsp Asafoetida / Hing
  • Salt to taste
  • 1/2 Tsp Coarsely ground pepper
  • 1 Tsp Red Chilli Powder
  • Oil for Frying
  • 1/2 Tsp Amchur Powder
  • Water for kneading the dough

Method to prepare Masala Sev:

  • Take a wide bottom bowl. Add besan ,rice flour,roasted urad dal flour,hing, turmeric,amchur powder, salt, red chilli powder, jeera, pepper powder and ajwain. Mix well. Add 2 tbsp sizzling hot oil. Mix well using a spoon.
  • Once the mixture is crumbly add water slowly to knead dough. It will be a soft dough.Allow it to rest for 15 minutes.
  • Grease the chakli mould with oil. grease your palms and take a small ball of the dough .Place the dough into the greased mould.
  • Heat oil for frying. Once the oil is hot, reduce the flame. In the hot oil, directly press the sev maker to make sev. Move in a circular motion so that sev is equally distributed.
  • Once it turns crisp and golden gently turn over and fry the other side. Once both the sides are crisp and golden , remove from the frying pan and transfer on to a plate with a paper towel. Paper towel will absorb the excess oil.
  • Repeat the process for the balance dough.
  • Delicious snack is ready. Once it reaches room temperature store them in an air tight container.
  • Absolutely irresistible.

  3. What an innovative way to get your sev mould Preethi, kudos to your hubby. Sev is also one snack that I don’t prepare so often as it involves frying. However, do make it whenever I need it for chaats and I love to snack on the thicker sev.

  4. I always make this with plain gram flour never added rice or urad dal flour. I am sure it would add a nice crunch and taste to it. Would love to try this next time.
