MASALA ROTI (GLUTEN FREE)

Today I am sharing a delicious Roti recipe that is gluten free. Masala Roti (Gluten free) can be served for breakfast , lunch or dinner. It is very filling and nutritious. In India we can find many types of breads and it varies from region to region. Each region has its own unique recipe.My family loves Roti and other Indian flat breads. They are very easy to make .

Some Info about Indian Breads:

  • Most flat breads from northern India are unleavened and made primarily from milled flour, usually atta or maida, and water.
  • Some flatbreads, especially paratha, may be stuffed with vegetables and layered with either ghee or butter.
  • Some breads are made on the skillet , some are deep fried and some are baked in an oven.
  • Indian Cuisine is known for its leavened and unleavened flatbread.

Ingredients for Masala Roti (Gluten Free):

  • Chickpea Flour /Besan : Chickpea flour is gluten free . It is rich in Vitamins and Minerals. It is loaded with fiber.
  • Rice Flour: It is gluten free and good for people with gluten allergies.
  • Jeera / Cumin: Aromatic spice that aids digestion and is rich in Anti oxidants.
  • Black Sesame Seeds:Natural source of plant protein that is gluten free and rich in fiber.
  • Garam Masala: Aromatic spice blend that enhances the taste of the Roti. I have used home made Garam Masala.
  • Salt: I have used Himalayan pink salt. You can use any regular salt that you use.
  • Chilli Flakes: Gives a nice colour and some mild spice kick to the roti. You can use Kashmiri red chilli powder instead.
  • Yogurt: Yogurt is  high in protein, calcium, vitamins, and live culture, or probiotics, which can enhance the gut microbiota.Roti tastes awesome.
  • Plain Water: Add little water only if need after you add yogurt.
  • Coriander leaves finely chopped: Gives a nice aroma and texture to the dish.
  • Oil: I have used sunflower oil for greasing the masala roti. You can add ghee.

Equipment Used:

  • Wide bottom Pan
  • Spatula
  • Griddle / Tava
  • Rolling Pin
  • Butter Paper / Banana Leaf

Ingredients for Masala Roti (Gluten Free)

  • 2 Cups Chickpea Flour /Besan
  • 1 Cup Rice Flour
  • 1 Tsp Jeera / Cumin
  • 1.5 Tsp Black Sesame Seeds
  • 1/2 Tsp Garam Masala
  • Salt to Taste
  • 1/4 Tsp Chilli Flakes
  • 3/4 Cup Yogurt
  • 2 Tsp Plain Water
  • Oil for greasing the Rotis
  • 1 Cup Fresh Coriander leaves finely chopped

Method:

  • In a large bowl, stir together the chickpea flour , rice flour , jeera , garam masala , black sesame seeds , chilli flakes and salt. Use a wooden spoon to stir in the yogurt and enough water to make a soft dough . Knead the dough until it is smooth.
  • Leave it to rest for 10 minutes .
  • Divide the dough into equal parts .
  • Slightly grease the butter paper or banana leaf. Keep a ball of dough in the center. Place a butter paper or banana leaf on top and flatten it using a rolling pin.
  • Pat the finely chopped coriander on the top.
  • Heat a griddle or Tava.
  • Gently transfer the rolled roti to the hot Griddle / Tava once the tava is hot enough
  • Cook for 30 seconds untill you see brown spots on the roti. Flip to cook the other side.
  • If you see brown spots all over, means it has cooked enough.
  • Repeat the process for the remaining dough.
  • Serve with Tomato Chutney and Yogurt or any chutney of your choice.

  1. Masala paratha recipes sounds so flavourful and delicious with all the spices used in the recipe..I loved your version with rice flour added here, I only make with chickpea flour.. these are perfect for breakfast or light meal with curd and pickle

  2. Masala Roti that too gluten free with all the spices sounds amazing! I make with chichpea flour and whole wheat flour. Loved the addition of rice flour and yogurt. Excellent share.

  3. Masala roti sounds absolutely delicious and flavorful. Rice will give a crisp texture to the paratha. A perfect yummy and nutritious breakfast recipe. I would love to have it with yogurt.
