We are gearing up for the upcoming Lunar New Year Festivities here. Longevity noodles for Lunar new year is the fastest recipe that you can whip. It is totally vegetarian and egg free too. I am looking forward to the long weekend to spend time with my family.

What is Lunar New Year?

Lunar new year is based on the cycles of the Moon. Chinese new year marks the beginning of the lunar new year. It marks a two days holiday in this part of the world. Chinese new year falls on Feb 12 and feb 13 this year.It marks a week long celebration in South East Asia. .

Ingredients for Longevity Noodle for Lunar New Year:

  • Thin Long Wheat Flour Noodles:You can use Thin long wheat noodles or brown rice noodles.
  • Shiitake Mushrooms :This Shitake, Black mushroom represents – longevity and sizing opportunities.
  • Oyster Mushroom –This is to bring good luck and longevity.
  • Baby Bok Choy–Greens represent family unity.
  • Snow Peas– Snow Peas represent unity
  • Garlic Pods –Garlic imparts a nice flavor to the dish.
  • Low Sodium Soya Sauce–Imparts a nice taste and color to the dish.
  • Tsp Chilli Oil— Adds some spice kick to the dish.
  • Tbsp Sesame Oil–Imparts a nice flavor and taste to the dish

Recipe for Longevity Noodles for Lunar New Year:

Ingredients :

  • 350 Gms thin Long Wheat Flour Noodles
  • 1 Cup Shiitake Mushrooms Chopped
  • 1 Oyster Mushroom Cut Lengthwise
  • 10 Baby Bok Choy
  • 10 Snow Peas
  • 3 Garlic Pods Finely Chopped
  • 1 Tbsp Low Sodium Soya Sauce
  • 1 Tsp Chilli Oil
  • 2 Tbsp Sesame Oil
  • 1/4 Tsp Pepper

Method:

  • Bring a large pot of water to boil over high heat. Place the noodle in the boiling water and let it cook for 2-3 minutes. Do not overcook.
  • Drain and rinse with cold water and set aside in a large serving bowl.
  • Blanch the baby bok choy and snow peas for about 2 mins and keep it aside.
  • Heat chilli oil in a pan. Toss the finely chopped garlic and mushroom. As the mushrooms start to slightly wilt add the blanched greens and mix well. Stir fry for about 2 minutes on high heat and turn off the heat.
  • In a bowl whisk soya sauce, pepper and sesame oil. Pour this mixture over the noodles and toss well to coat.
  • Add the stir fried veggies and garlic.
  • Mix well .Serve immediately with Vinegar Chilli.
