Karela Stuff / Bitter Gourd Stuff

Bitter Gourd is disliked by many because of it’s bitter taste. It is Widely used in Chinese , Japanese and Indian cuisine due to its medicinal values.

There are many ways to cook bitter gourd. I love Bitter gourd stuff . I will share this spicy and tangy bitter gourd stuff recipe and it is not bitter too.

It is very easy and tastes Yummy . A person who dislikes Karela will also fall in love with this dish.

Recipe for Bitter Gour Stuff:

Ingredients:

3 Karelas /Bitter gourd( Long green ones)

1 Tsp Haldi / Turmeric

1/2 Tsp Salt

1 Tsp Red Chilli Powder

Juice of 1 lemon

3 Medium Size onions chopped

1″ Ginger chopped

6 Garlic pods chopped

2 Red Tomatoes chopped

1 Tsp Kali Mirch /Pepper corns

1 Tsp  Dhania powder/ Coriander Powder

2Tsp Jeera Powder / Cumin Powder

1/2 Tsp Garam Masala

1/2 Tsp Chaat Masala

3 Dry Red Chillies

8 Cashews

Salt to taste

Method:

Cut each  Karelas or Bitter gourd into 4 parts. Scoop the  seeds but ensure there is a thin layer at the bottom so that we can stuff the masala. Mix 1/2 Tsp salt, lime juice  and Haldi / Turmeric and keep it aside for 45 mins. Throw the water later.

Heat 1/2 tsp of oil. Add  Kali mirch / pepper corns . Add Chopped Garlic  and Ginger. Roast for 1 min. Add the chopped onions and roast well till they turn brown.Add Cashews, red Chilli, Chilli powder, Garam masala, Jeera powder, Dhania powder and chaat masala. Mix well and roast well for 5 mins. Add the chopped tomatoes. Mix well and keep it on low flame till the tomatoes turn mushy and blends well with the masala.

Switch off the flame and allow it to cool.

Once the masala has cooled, blend well to a fine paste in a blender. Add salt to taste. Blend the mixture once again.

Stuff the Karelas with this masala generously. Bake in an oven at 180 C for 30 mins.

Once done heat a tsp of oil in a wok. Add the baked stuffed Karela . Add the extra masala.Roast on medium flame for 25 mins. Switch off the flame. Garnish with Raosted sesame seeds and serve hot with steamed Rice.
