DRY FRUIT & SEEDS KESARIBATH (SWEET)

Today I am sharing a delicious recipe called Kesaribath from Karnataka. It is very quick and simple recipe. It is usually served with upma or kharabath and is one the breakfast menu for all weddings and festivities. I craved to eat this delicious sweet after a long time. This recipe is my humble contribution for 85TH HWCG Theme #TimeFor SemolinaAtHW. Semolina is widely used in Indian cooking . Both and savory and sweets can be made using this semolina.It  is the coarse, purified wheat middlings of durum wheat. As an alternative to corn meal, semolina can be used to flour the baking surface to prevent sticking. In bread making, a small proportion of durum semolina added to the usual mix of flour is said to produce a tasty crust.

Recipe for Dry Fruit & Seeds Kesaribath:

Ingredients:

1 Cup =160 ML
  • 1 Cup Roasted Semolina
  • 1.5 Cup Full fat Milk
  • A Cup of Water
  • 2 Tbsp Ghee
  • 1/4 Tsp Cardamom Powder
  • 1/2 Cup Dry fruits and seeds mix
  • 7 Tsp Sugar
  • 1/4 Tsp Saffron

Method :

  • Heat a wide bottom pan. Heat 1 Tbsp Ghee. Dry roast the dry fruits and seeds until they turn slightly brown. Do not burn. Remove and keep it aside.
  • Soak saffron strands in 1/2 cup milk for about 15 -20 mins
  • Boil the water in a small Suace Pan.
  • In the same pan add balance ghee. Add roasted Semolina . After few seconds you get a nice aroma. Add boiling water and mix well.
  • Add milk and sugar and mix until the liquid is absorbed . Lastly add the saffron soaked milk and mix again
  • Once the ghee starts to leave the sides add the roasted fruits and seeds . Lastly sprinkle cardamom powder and mix again.
  • Serve warm .
