Diwali is fast approaching. Hope you are all gearing up for the festivities.Today i am sharing a very delicious and quick recipe.You can make it in just 30 minutes with just a few ingredients. It is refined sugar free. Let us celebrate this Diwali with a hope for the world to heal and get better. Please think about the environment and do not burst crackers. Diwali is just a few day away. We are all busy cleaning our homes and preparing all the savory and sweet goodies to celebrate with family. This year our celebrations are not going to be the same as previous years. But the festive spirit is not dampened. We are ready to celebrate this festival with more positivity .

Ingredients for Dry fruit & Coconut Ladoo :

  • Freshly Grated Coconut———-I love coconut and this is an integral part of our daily cooking .
  • Cashews—–Cashews are known to be low in sugar and rich in fiber, heart-healthy fats, and plant protein.
  • Almonds——-These are known to lower LDL (bad) cholesterol and are packed with vitamin E, magnesium and potassium
  • Organic Jaggery——–Great alternative to refined sugar. Jaggery is loaded with antioxidants and minerals like zinc and selenium.
  • Saffron—- An exotic spice and optional to use.
  • Ghee —-Helps to keep the ladoo moist ,delicious and good to bind.
  • Coconut Cream ——–Gives a rich taste to the ladoo.

Recipe for Dry Fruits & Coconut Ladoo:

  • Cook Time : 15 Mins
  • Total Time : 25 mins
  • Course : Dessert

Ingredients:

  • 2.5 Cup Freshly grated coconut
  • 1 Cup Jaggery
  • 1 Tsp Ghee
  • 6 Cashews finely Chopped
  • 1/2 Cup Almonds powdered
  • 1/4th Tsp Cardamom Powder
  • Few saffron strands for Garnish
  • 6 Almonds grated for garnish
  • 1 Tbsp Coconut cream

Method:

  • Heat a wide bottom pan. Add ghee and freshly grated coconut.
  • Saute for about 5 minutes untill the moisture is slightly evaporated.
  • Next step add powdered jaggery and cook on medium flame.
  • Once the jaggery is melted add the coconut cream ,finely chopped cashews and powdered almond. Mix well and cook untill all the ingredients are well combined.
  • Cook untill the mixture starts to hold shape.
  • Lastly add cardamom powder and mix again.
  • Once the mixture is warm shape them into round balls. Garnish with saffron strands and grated almonds.
  • Serve these gorgeous ladoos to your family and friends .
  • Ensure to store them in an air tight container.
