DHANIYA KUZHAMBU / MALLI KUZHAMBU

Planning what to cook everyday with available ingredients is a task. We are all working from home and cooking breakfast and two meals needs some planning. Given the present situation everywhere sometimes we run out of veggies . Today I am sharing a very easy and quick recipe Dhaniya Kuzhambu / Malli Kuzhambu which can be ready in just 25 minutes with easily available pantry staple.

What is Kuzhambu?

This is a popular dish from Tamilnadu and Srilankan Cuisine. A tamrind based gravy with spices .It may include meat , fresh veggies or sundrid veggies and dal in some cases.For Kuḻambu that includes vegetables, they are cut and then added to the fry, with shallots, and garlic being added first, and pureed or diced tomatoes going last.It is usually prepared with Brinjal, shallots , ladys finger and drumstick.Some Popular Varieties of Vegetarian Kuzhambu:

Ingredients for Dhaniya Kuzhambu / Malli Kuzhambu:

  • Dhani / Coriander Seeds
  • Dry Red Chilli
  • Black Pepper
  • Tamrind
  • Curry Leaves
  • Asafoetida
  • Salt
  • Mustard seeds
  • Dried Turkey Berry
  • Dried Curd Chilli
  • Oil

Recipe for Dhaniya Kuzhambu / Malli Kuzhambu:

Ingredients for Dhaniya Kuzhambu / Malli Kuzhambu:

  • 1/4 Cup Coriander Seeds (250 ML Cup)
  • 6 Dry Red Chillies
  • 1 Tsp Black Peppercorns
  • Lemon Size Tamrind
  • 2 Tsp Oil
  • 1/2 Tsp Rasam Powder

For Tempering:

  • 1/2 Tsp Mustard Seeds
  • Few Curry Leaves
  • 4 Dried Curd Chillies
  • 20 Dried Sundakkai Vathal (Dried turkey Berry)
  • 1 Tsp Oil
  • 1/4 Tsp Asafoetida

Method:

  • Soak Tamrind in luke warm water for about 10 minutes. Squeeze the pulp and remove it.
  • Keep the tamrind water aside.
  • Heat 2 tsp oil in a wok. Roast Dhaniya / coriander seeds , dry red chillies and black pepper untill you get the aroma.
  • Allow it to cool and grind them to smooth paste.
  • Heat a tsp of oil in a wok. Add mustard seeds and asafoetida.
  • Once the mustard crackles pour the tamrind water and allow it to boil for about 5 mins.
  • Add the coriander paste , rasam powder , salt and allow it to boil for about 8 minutes and turn off the heat.
  • In a small pan heat oil. Fry the sundakkai Vathal and curd chilli. Keep them aside
  • In the same pan add some curry leaves .
  • Once they are crisp turn off the heat.
  • Add the curry leaves , fried curd chilli and fried sundakkai vathal to the kuzhambu.
  • Serve with hot rice and Gingelly Oil.
  • Enjoy………………………….

Notes:

  • You can skip curd chilli and dried sundakkai vathal if you do not have.
  • Any dried vathal can be used.
  • Veggies like pearl onion / Ladys finger / Drumstick / brinjal / Plantain / garlic / tomatoes can be used
  • Adjust spice as per your spice tolerance

    Preethi I love tamarind based dishes , the name is again new for me. You have given so màny veg version of this dish so i am saving it for try it sometime.

  3. Curry looks so delicious and sounds so comforting with tangy tamarind, coriander and other spices.. this is a new dish for me and will love to try it out sometime.. what can be the replacement for dried turkey berry or we can skip it.

  7. This sounds absolutely delicious and I always amazed with your flavorful recipes. Perfect dish that going with roti or rice. We can make this recipe, when we want to eat something different from unusual our daily meal with few ingredients.

  8. Dhaniya Kuzhambu is a huge favourite at our place. I love how it comes together with just a few pantry ingredients and isn’t very tough to make either. I love that you have added dried Turkey berries to the Kuzhambu – should try out your version some time.

  9. I can feel the aroma of this tamarind based curry. Looks so inviting. Perfect curry with steamed rice. A completely new dish for me. Can’t wait to try.
