Today I am sharing an amazing recipe from the Emirati Cuisine. Emirati cuisine is powerhouse of flavorful dishes. People have a misconception that it is only meat based dishes but it has many vegetarian and vegan dishes too .Today I am sharing a recipe of aromatic Bzar( Emirati Spice Blend) ., a UAE version of Garam Masala. It is a flavorful spice blend ready in less than 5 minutes if you have all the ingredients. My house is smelling with the aroma of this flavorful spice blend.

What is Emirati Cuisine?

Emirati Cuisine refers to the Arabic cuisine from the UAE. It is slightly similar to the Omani and Saudi Arabian Cuisine.The food consists of a mixture between a bedouins diet, which usually consists of meat and camel milk, fishermen’s diet, which consists mainly of fish common in the Persian gulf, and farmers diet, which mainly consists of dates. A blend of the mixture of spices such as cinnamon, saffron, and turmeric formed the basis of the common dishes that was consumed in the region and the current traditional Emirati cuisine. Modern diet of UAE is now multicultural. Traditional recipes Include: Maq’louba, Margooga, Harees, Machbous, Frsee’ah, Fireed, Jisheid, and Mishwy. Breakfast in the UAE usually features breads like raqaq, khameer, and chebab, served with cheese, date syrup, or eggs.

It is something new for me to explore .You all know I love different spice blends and first thing i wanted to share is this emirati spice blend. Recipe for Bzar (Emirati Spice Blend):

INGREDIENTS FOR BZAR(EMIRATI SPICE BLEND)

Ingredients:

  • 1/4 Cup Cumin Seeds
  • 1 Tbsp Cloves
  • 2 Cinnamon Sticks
  • 1/4 Cup Coriander
  • 1 Whole Nutmeg broken into Pieces
  • 1 Tbsp green Cardamom
  • 1/4 Cup Black Pepper Corns
  • 1 Tbsp Ginger Powder
  • 4 Dry Red Chillies
  • 1 Tbsp Turmeric Powder

Method:

  • Pulse cumin,coriander,pepper corns, cloves,red chillies , cardamom, cinnamon and nutmeg to get a fine powder.
  • Then mix ginger powder and turmeric and mix well.
  • Store it in an air tight container
  • It is used to spice the stews , great rub for meats , sauted with butter or ghee and use to garnish dal. I used it to make Stir Fried Potatoes. It was finger licking good.

  1. This spice mix looks so colorful and I can bet on the aroma that would have filled in the air ..i have all these on hand ..I think I will whip up this spice blend right away . It should go well as a seasoning with all our Indian gravies and pulao variants too.

  2. Thanks for your kind words, Preethi ! Emiratiu cuisine is indeed redulant with spice mixes like these.. I too made the spice mix for Machboos, but probably I followed a much easier spice mix. bookmarking this to try soon..

  3. Fresh spice mixtures made at home are so flavorful and aromatic. Trade with neighboring countries brought so many spices into the UAE region. Amazing how similar it looks to the Indian Masala. But then aren’t many dishes so similar. Like how you’ve used bzar spice blend with potatoes.

  4. Wow such a colorful pic di, its very inviting. Loved all the ingredients used in it. No doubt this spices aroma stay long in our kitchen, butter sauted potatoes using bzar spice powder looks yummy.

  5. Wow what a wonderful spice mix. I can feel the aroma. I think we can also use it in our Indian dishes for a different flavour. I would love to make it and store for later use.
