This week I am back with another delicious recipe that is spicy and baked. Both my boys were home for lunch on a weekday after a long time. I wanted to treat them with their favorite Baked Aloo Kulcha (Instant) . They enjoyed every bite and I could see their eyes brighten up . Believe me , I am not exaggerating. What is Aloo Kulcha ?

Aloo Kulcha is a spicy Potato filling stuffed flatbread that is very popular from the North Indian Cuisine. It is mostly popular in Delhi and Punjab. But these days we can find this dish in different parts of the world. We are connected by food . It is basically made with maida or refined flour. But I have made these with whole wheat flour and without yeast. This is an instant version.

Recipe for Baked Aloo Kulcha(Instant):

Ingredients:

For the Dough:
  • 2 Cups Whole Wheat Flour
  • 3 Tbsp Yogurt
  • Salt to taste
  • 1/2 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1 Tsp Sugar
  • Butter to apply before serving
  • 1/3 Cup Milk
For Garnish:
  • 1 Cup Chopped Cilantro
  • 2 Tbsp Kalonji seeds
  • Milk for Brushing
For Stuffing:
  • 6 Medium Sized Potatoes boiled and mashed
  • 1 Onion Finely Chopped
  • 2 Green Chillies finely chopped
  • 1/2 Tsp Kashmiri chilli powder
  • 1/4 Tsp Amchoor powder
  • 1/2 Tsp Cumin Powder
  • Finely Chopped Fresh coriander
  • Black Salt to taste
  • 1/2 Tsp Kasuri Methi
  • 1 Tsp Grated Ginger

Method:

  • Take a wide bottom bowl. Add flour , salt, baking powder ,baking soda ,sugar and yogurt. Mix well until you get a crumbly texture.
  • Add Milk slowly and mix well until it combines to form a nice soft dough.
  • Cover the dough with a damp cloth and allow it to rest for 30 minutes.
For Stuffing :
  • Take a wide bottom bowl. Add mashed potatoes and finely chopped onions.
  • Add chopped green chillies , kashmiri chilli powder, amchoor, kasuri methi, balck salt, grated ginger, chopped coriander and jeera powder.
  • Mix until well combined. Stuffing is now ready.
To prepare Kulcha:
  • Divide the dough into equal parts .
  • Take one dough ball .Dust some flour and roll the dough to flatten it.
  • Take some filling and place it in the center. Gather all the sides and seal it.
  • Roll the dough into a round or desired shape.
  • Sprinkle some fresh coriander and kalonji seeds and roll gently.
  • Brush the top with some milk.
To Bake:
  • Pre heat the oven at 220 Degree centigrade.
  • Bake for about 20-25 minutes or until you get a nice brown colour.
  • Brush it with butter before serving.
