AMARANTH GREENS KOFTA CURRY

Today I am sharing a lip smacking Kofta recipe that my kofta frenzy boys love to eat. It is loaded with the goodness of fresh Amaranth greens. Amaranth greens Kofta Curry is so delicious. Efforts to make them is absolutely worth it. Do try to believe it.It was slightly spicy which I loved.

What is Kofta?

Koftas are round dumplings usually deep fried or shallow fried made with minced meat or vegetables ,some spices and then dunked in a curry. They are many variations to kofta recipe.Koftas have a nice rich texture. They are usually served with Roti and Naan. You can make it with or without cream. Koftas are crisp on the outside and soft from the inside.

Ingredients for Amranth Greens Kofta Curry:

  • Amaranth Greens: These are rich in Vitamin A and AntiOxidants.
  • Gram Flour / Besan : Helps to bind the kofta.You may add potatoes and paneer as well.
  • Onion : Gives a nice texture to the gravy. These are rich in AntiOxidants too.
  • Tomato: Great Source of Vitamin C ,Folate, Potassium and Vitamin K.
  • Chilli: These are rich in Vitamin C and AntiOxidants. Gives some spice kick to the dish.
  • Garam Masala:Adds nice flavor and taste to the dish . Has so many spices .
  • Ginger :Has Inflammatory properties and has lot of health benefits.
  • Garlic: Has medicinal properties and proven health benefits.
  • Salt: Main ingredient of the dish.
  • Vegetable Masala: I have added it to the gravy and it tastes amazing .Nice variation to the regular garam masala.
  • Oil: Use any odourless oil for gravy and Shallow frying the Koftas.
  • Cumin:Rich in AntiOxidants and aids digestion. One of my most favourite Spice.
  • Bay Leaf: Adds a nice aroma to the dish.rich source of vitamin A, vitamin C, iron, potassium, calcium, and magnesium.
  • Red Pepper Corns: I am in love with these red pepper corns now.
  • Coarse Black Pepper Powder: Rich in AntiOxidants. Adds some spice kick to the kofta.
  • Kasuri Methi: Another flavorful ingredient for the curry.
  • Poppy Seeds: Has many health benefits when consumed in moderation. Adds a nutty flavor to the curry.
  • Red Chilli Powder: Kashmiri red chilli powder adds a nice colour to the gravy and is non spicy.
  • Turmeric Powder: Has many health benefits and i use in as many dishes as possible.
  • Cashews: Gives a rich texture to the gravy.

AMARANTH GREENS KOFTA CURRY

Ingredients for Amaranth Greens Kofta Curry:

For Kofta :

  • 1 Bunch Amaranth Greens finely chopped
  • Salt to taste
  • 1 Cup Roasted Gram Flour / Besan
  • 1/4 Tsp Garam Masala
  • 1 Tsp Coarse Pepper Powder
  • 1 Inch Ginger Finely Chopped
  • 2 Green Chillies finely chopped
  • Oil for Shallow frying
  • 1 Tbsp Onion Finely Chopped

For Gravy:

  • 2 Tsp Oil
  • 1 Bay Leaf / Tej Patta
  • 2 Tsp Jeera / Cumin seeds
  • 3 Onions chopped
  • 2 Tsp Kasuri Methi
  • 1 Tsp Poppy Seeds
  • 4 Garlic Cloves
  • 1 Inch Ginger
  • 1/2 Tsp Haldi / Turmeric Powder
  • 3/4 Tsp Kashmiri Red Chilli Powder
  • 2 Fresh Red Chillies
  • 3 Tbsp Fresh Coriander Finely chopped
  • 4 Tomatoes Chopped
  • 5 Cashews
  • Salt to Taste
  • 1/2 Tsp Vegetable Masala
  • 1/4 Tsp Red Pepper Corns
  • 1 Cup Water

Method:

For Kofta :

  • In a wide bowl add finely chopped Amaranth greens, onion ,green chilli , besan ,garam masala, ginger ,pepper powder and salt.
  • Combine all the ingredients to form a sticky dough.
  • Grease your palms with oil and make small balls of the dough.
  • Heat oil in a wok. Shallow fry these kofta balls untill they are golden brown and crisp.
  • Add these crsip koftas to the curry just before serving .

For Curry:

  • Heat a wide bottom pan.
  • Add 1 tsp oil and saute 1 Tsp cumin ,ginger and garlic pods.
  • Now add Onions and saute untill they turn translucent.
  • Add chopped tomatoes ,Turmeric , red chilli , poppy seeds , Fresh coriander ,cashews and red pepper Corns.
  • Mix and let it cook on medium flame untill the tomatoes are mushy.
  • Allow it to cool Completely and grind to a smooth Paste.
  • In the same wok add remaining oil. Saute jeera and Tej Patta.
  • Add the tomato onion mixture , 1 Cup water vegetable masala and Kasuri Methi and let it simmer for 10 minutes.
  • Turn off the heat.
  • Add Koftas and garnish with Fresh Coriander and serve
  • Enjoy……………………

Notes:

  • You can substitute Spinach in case you don’t have Amaranth Leaves.
  • Drizzle some fresh cream just before serving if you wish to.
  • Add paneer or Potatoes to the Koftas.
  • You can cook the spinach and puree and then add mashed potatoes or grated Paneer.

  2. the greens-laden koftas with the poppy seeds in the base curry looks and sounds delish, preethi! what is veg masala used here ? Is it palyada pudi?

      Hey Kalyani I have a recipe for vegetable masala . Here I have used Aachi brand vegetable masala. I love their spice mix.

  3. Amarnath greens kofta looks so creamy and lip-smacking curry. so healthy and nutritious with the addition of Amarnath greens. Surely going to try for my kids.
