ALOO KA BHARTA / MASHED POTATO CURRY

Today I am sharing a delicious lip smacking recipe with Aloo or potatoes. A perfect curry to be served with Roti or Phulkas. Aloo ka bharta / Mashed Potato curry is quick recipe and easy to make. Goes well toasted Pav or buns too.Sometimes when are short of time to cook, this recipe is a life saver. My boys loved it. Potatoes are high in vitamins, minerals, antioxidants, fiber and resistant starch. It is good to consume when boiled , or cooked without too much oil.Fiber can help prevent heart disease by keeping cholesterol and blood sugar levels in check. Potatoes are also full of antioxidants that work to prevent diseases and vitamins that help our body to function properly. Anything eaten in moderation is ok, unless some medical condition prevents you from eating potatoes. Do follow your doctor’s advise.

Ingredients for Aloo ka Bharta / Mashed Potato Curry:

  • Boiled Potatoes:Use boiled and nicely mashed potatoes.I have also mentioned the alternatives for potato in my notes. Avoid adding big lumps.
  • Onion: I have finely chopped the onions as it blends very well with the spices and tastes better.
  • Tomato: Finely puree the tomatoes .Use nice red ones .
  • Ginger Garlic Paste: I have used freshly pounded ginger garlic paste. Tastes great with fresh paste.
  • Oil: I have used sunflower oil. You can also use Mustard Oil too.
  • Jeera / Cumin: This is one spice i love the most. Has many health benefits.
  • Kasuri Methi: A flavor enhancer which enhances the taste of the dish.
  • Fresh Coriander: Use half of the fresh coriander in the subzi and keep some for garnishing before serving.
  • Kashmiri red chilli Powder: Adds a mild spice kick but a beautiful color to the dish.
  • Asafoetida: Aids digestion and is good for tummy. Always add to curry with root vegetables.
  • Green Chilli: I like the aroma of the green chillies. I have used the ones that are less spicy.
  • Garam Masala :I have used home made garam masala. You may use your regular garam masala. This is the game changer for this dish.
  • Kitchen King Masala: When blended with garam masala it tastes even better.
  • Chaat Masala: The tomatoes i used were not sour at all so i added some chaat masala to balance the spices.
  • Water: Add water to ensure the consistency is just right and not watery. Increase or decrease the quantity of water as per the consistency you like.
  • Beaten Curd: Beat the curd and ensure it is smooth and lump free. Always add on low flame and keep stirring .I have used home made curd.
  • Salt: I have used Himalayan Pink salt. You can add your regular salt.

  • Wide bottom Pan
  • Spatula

Ingredients for Aloo ka Bharta / Mashed Potato Curry:

  • 3 Potatoes boiled and mashed
  • 2 Red Onions Finely chopped
  • 1 Tsp Ginger Garlic Paste
  • 3 Green Chillies Slit
  • 2 Tomatoes Pureed
  • 2 Tsp Kashmiri Red Chilli Powder
  • 1/2 Tsp Kasuri Methi
  • 1 Tbsp Finely chopped fresh coriander
  • 1/4 Tsp Asafoetida
  • Salt to taste
  • 2 Tsp Oil
  • 1 Tsp Garam Masala
  • 1/2 Tsp Chaat Masala
  • 1 Tsp Kitchen King Masala
  • 2 Tbsp Beaten Curd
  • 160 ML water
  • 1 Tsp Jeera / Cumin

Method:

  • Heat oil in a wide bottom Pan.
  • Add Cumin , Asafoetida ,kasuri methi and fresh coriander. Mix well for a minute.
  • Now add ginger garlic paste , slit green chillies and finely chopped onions. Saute untill the onions turn slightly brown.
  • Add Tomato Puree , red chilli powder , salt ,garam masala , chaat masala and kitchen king masala.
  • Let it cook untill the raw smell is gone and oil starts to leave the sides.
  • Reduce the flame and add beaten curd. Keep stirring continuously for about 5 minutes.
  • Next add boiled potatoes , water to adjust the consistency and mix well.
  • Let it cook on low flame for about 10 minutes.
  • Garnish with fresh coriander and serve..

Notes:

  • You can replace potato with boiled and mashed Raw banana , roasted and mashed brinjal or even boiled and mashed Arbi.
  • Adjust spices as per your taste. The spices added here are perfect for my family.
  • You may skip adding green chillies if don’t want it spicy. I would suggest you can reduce the quantity of chillies instead of completely omitting it.

  1. Preethi wow, such a unique recipe. Never heard of aloo ka bharta but it definitely is bookmarked to try. A quick and delicious curry comes together in a jiffy. Keeping this in mind for the winter months 😉

  2. This looks a very apt dish to try with puris or even rice. A close resemblance with aloo rasaa but it has its uniqueness. I have never been adding curd to potatoes. But I will try out this overpowering recipe.
